For sale is one new, factory-second*: Shun Edo 8 1/4" Dual Density Serrated Utility Knife, model BB1506; made in Japan . * Note:
This
knife is an unmarked factory-second (no 'xxxx' on the blade). It appears to have been designated a factory-second due to some subtle
hairline cracks in the handle that do not capture on camera. These cracks are fairly common for the
Edo line and not unique to factory-seconds; they do not affect feel or
performance and are primarily aesthetic. The knife also shows some handling damage (normal for seconds), including some subtle nicks to the bolster and a small dent in the handle. The tip of the knife is less pointed than typical, which could indicate a chip that was ground out (this is 'good' as these tend to have very weak tips that chip with use; the knife is now more stable). Handle alignment is fairly good for the Edo, though not perfect (perfect examples are rare, and this falls within the typical offset). While not
necessarily suitable for the collector,
this knife is perfect for the amateur or professional chef who intends
